Dining here is a true culinary experience. From the swanky vibes of the interior to the unique and decadent dishes offered, this place truly is a dumpling lab. My boyfriend and I walked in for a late lunch on a Saturday and were seated promptly. There's seating upstairs as well as downstairs but they were only using the upstairs this particular day. Every seat was full including all the bar seats.
We ordered a wide array of dishes: 18 dumplings (truffle, mackerel, chicken), tofu, crispy popcorn chicken, and truffle shrimp toast. My favorites were the truffle shrimp toast and the truffle dumplings, that toast had me salivating with every bite and I know I'll be thinking about it for a good while until I return. Some of the dumplings had the option to pan fry which I prefer since it adds extra texture. I made a reservation for lunch immediately when they opened. You can order your food through a QR code and pay for the meal through the website. Ordered through Google on DoorDash after seeing this place on Eater's list of new Michelin Bib Gourmand restaurants. Decided to try the truffle dumplings. Note that you cannot get the truffle dumplings as part of the "pick 2 dumplings" deal; ended up being about $18 for 6 dumplings. The order took about an hour and I walked in and picked up at the counter. The interior was clean and modern and the upstairs dining area was almost completely empty on a Friday at 1 PM; you don't appear to need reservations for lunch.
The dumplings were tasty but didn't blow me away for the price. The truffle flavor definitely comes through and the interior is a little chunky/texture-y. A lowkey and hidden spot just off the side of St. Marks. Dumpling Lab is curated by the same team as Hunan Slurp, a restaurant I love, so wanted to check it out! I had an intimate birthday dinner here, and we were seated in the downstairs for 7 of us. The setup, lighting and even music felt like we were in the MOMA - quite futuristic and artsy.
It helped that the menu items aer small plates, allowing us to order most of the things on the menu to try a bit of everything. Everything is ordered via QR code on Toast Tab and it was convenient to just add any additional item when we wanted to.
We all loved the twist on traditional dumplings, whether that was adding truffle to it or mackarel, giving us the option to pan fry or boil, the creativity and flexibility provided for a wider range of options.
Perhaps because of a Sunday evening, the basement area was just us and it added to the intimacy of the space and let our party just be at ease. There was also no cake cutting fee, and they unexpectedly played the birthday song as they brought that down.

The dumplings aren't bad--they're very tasty, actually--but they're too small to justify the price. An order of 6 beef or chicken dumplings is $8-9, and the uni dumpling set (also 6) is $20. The truffle dumplings were probably the most interesting because for once the truffle didn't overwhelm the rest of the flavors (and even won over my friend who hates truffle). However, the Edamame was ice cold, and I have no idea why: In my entire life, I've never met anyone who wanted frigid edamame.
I will give them points for having Happy Hour on a weekend, with glasses of wine ranging from $10-11 and cocktails starting at $9. The very nice two guys manning the restaurant also gave me extra red wine. Speaking Mando helps, but isn't necessary.
Decor is trendy sleek 'n' chic, with a nice hanging wall garden to point you to the staircase to the bottom floor where there's extra seating and the restrooms. Dumpling Lab doesn't take reservations, so we came here at 5pm sharp on Saturday and were seated right away. What an interesting place. Didn't realize there was a downstairs and upon finding the other part of my party, realized we had the whole lower level to ourselves. So that was kinda cool. Food was delicious with my favorite, Unagi dumplings....and of course the truffle ones. I guess this place has a rotating menu so that helps to want to go back.
Very high tech with all ordering on your personal phone via the website. One item of note, you can access the menu/order again via the text link. If you go through the QR code again, you'll have to sign in as a new person. Excellent new spot from the team behind Hunan Slurp, with much more than just dumplings. Definitely get the Mapo Tofu, made with mushroom instead of pork, and the mouthwatering chicken to give your lips a buzz while you wait for your dumplings.

You can enjoy your dumping with some cocktail and wine.
All the dumpling is fresh made daily

Stopped by for a Quick small bite and got the Shrimp toast based off of recommendations from fellow yelpers.
This is similar to what you would get at a Cantonese dim sum establishment. The toast was crunchy. You bite down and you get a taste of shrimp paste made from minced shrimp and well seasoned sauce. Being fans of their sister restaurant Hunan Slurp, Dumpling Lab was on my to-gos when I saw their soft opening announcement!
Came in as table of 3 right before a movie and ordered a spread of different dumplings and appetizers. The ones I would recommend from our meal would be the Truffle Shrimp Toast and the Uni Dumplings / definitely different/unique flavors.
Their menu is thoughtful and has a lot of different and varied flavors and ingredients which I appreciate. Wait staff and management are quick and friendly. Interior was minimalistic yet cosy.
