I went back recently and it was a lot better than last time. I usually don't like steak that much and tend to like the other dishes more. However, this time, the steak was the best dish. Kim was very attentive throughout the night! She made sure to check up on us often & went the extra mile to get us what we needed or wanted :)

However, it wasn't the best experience to be honest. The hostesses were not the most welcoming. They made us wait 10 minutes past the reservation time and seated us in the worst place possible. I must say we did change the reservation nonetheless they said they were available for that time. The service in the front was not superb nor did the food live up to Wolfgang Puck's name like Spago did. The steak was a little burnt. They waiters however were very quick on giving us what we ordered or asked for. So shout out to them! Since they seated us in an awkward spot in the entrance to the second part of the restaurant whenever the carts passed by it hit us, whenever the waiters passed by to serve food to the table next to us our seats were being constantly bumped into, the table next to us we're constantly bumping into our chairs because of the lack of space and this happened throughout the meal. The location of the table seemed to look like a safety hazard in my opinion. It is important to keep in mind that it was a busy night, but in my opinion that's not an excuse to treat your customers that way.

CUT, or more properly, CUT by Wolfgang Puck, is definitely upscale. A nicely decorated restaurant that is located within the Venetian Hotel, with a daily menu with some constants but also a changing menu depending on what is fresh and available.
The primary attraction here is steak. Wagyu and other cuts are available. I've had the American Rib Eye and American Wagyu New York Steak, and the steaks were excellent. It seems to be a "thing" with some people that a steak must be cooked a certain way. I don't care; it can be rare, it can be well done, and I'm fine with it; call me a heathen. That being said, I ordered my steaks medium rare both times, and they turned out perfectly. I think a 6 to 9-ounce portion size is fine, but you can request a slightly larger cut for a slight charge.
One time, I ordered my New York Steak with a topping of 'Point Reyes Blue Cheese.' I've included a somewhat blurry photo of that steak in my review, which doesn't do justice to the steak, but you can see the large quantity of blue cheese that smothers the steak. Now, it's my personal experience that when people request blue cheese on their steaks, they are not expecting a tiny dab of it; they're expecting a large quantity of blue cheese - after all, they are blue cheese lovers! And there is no disappointment here. My blurry photo proves that they understand the customer's love of blue cheese.
My dinner partners ordered Filet Mignon cuts and expressed total satisfaction. One of them said it was the best filet mignon they had ever had!
There are the sides you usually expect at a steak restaurant. However, I was most impressed with the Kung Pao Cauliflower. Most people probably react, cauliflower? Really? Ignore that feeling and just order it. I swear, you think you are eating a light meat, like chicken. I don't know what type of cooking sorcery is going on here, but it is the one item on the menu I recommend everyone try.
Desserts are very good. One fruit dessert was on the menu the first time I was here, but it was not on the menu three weeks later, an indication of the changing menu. One of the most popular desserts is the Banana Cream Pie, which pays homage to The Sphere, located next door to the Venetian. I was told people like to film the dessert presentation for later posting on social media.
Service is exemplary. Different people serve you depending on their specialty, drinks, appetizers, desserts, etc. The first time I was here, I counted nine different people interacting with me; the second time, it was seven people.
There was great care when first seated about making sure that there were no special dietary requirements (e.g., allergies, gluten). I don't have any issues, but I know others do, so it's nice that they spend the time verifying any possible issues with each diner.
Lastly, I must mention that this is a premium restaurant with premium prices. If you're careful with what you order, you can have a nice experience for less than $100. In my case, I was here to enjoy myself and spent many times that amount, but no regrets. Okay, this place has best service and ambiance which should be no surprise given the customer to staff ratio being appropriate, and the awesome leadership of the GM Cherry.
The food - very excellent cuts of meat that are filled with the best taste and seasoning. Sides are not too giant but still sufficient to share.
The chef knows how to grill steaks. I need mine cooked well no pink and I must say out of all the restaurants we have gone to, no one cooked our steaks to perfection like Cut.

Stopped in for a last minute dinner while staying at the Venetian. Ambiance was nice but a bit like a hotel lobby. Steak and salads were very good.
Service was good but also too frequent to have a conversation before being interrupted to be asked how it was, if we needed anything, or to pour more wine. Had I not stopped them our entire bottle of wine would have been poured in 20 mins.
It was fun to have our bottle decanted at the table using a candle. I thought it was to enhance the flavor with heat but it was actually to look for and avoid sediment.

EXCELLENT SERVICE AND AMAZING QUALITY OF FOOD!
This was my first time trying Cut. I've always wanted to try it and I'm so happy that I was able to in Vegas. The steaks were cooked to PERFECTION and the sauces paired perfectly with the meat.

For a long while, I was skeptical as to whether or not a restaurant affiliated with a celebrity chef was worth the attached premium menu prices. But within the past year, I have dined at several restaurants affiliated with celebrity chefs; I felt those dining experiences were commensurate to the menu prices; and so, my opinion on this matter has softened a bit.
Which bring us to "CUT by Wolfgang Puck".
Reservation ~ No Reservation ...
I dined alone on a Saturday evening. I arrived at about 6:00pm. I did not have a reservation.
When I arrived, I stated that I was dining alone and asked if they had available seating. I was told that they didn't have any tables, but seating at the bar was available. (I did notice that there were two-seat tables open--but I don't know if they were reserved, or if the house wanted to keep them open in case a couple arrived.)
I finished my meal at about 7:00pm. As I looked around, the restaurant was almost half empty. I joked with the bartender/waiter, "Did everyone run off to catch a show?" "Looks like it, doesn't it?" His response wasn't an answer--but I think I hit on something: Curtain call for a lot of shows is 7:00pm.
I suggest, if you're not going to see a show, don't have a dinner reservation, and don't want to get caught in the dinner rush--wait until after 7:00pm.
If you have tickets for a performance, make dinner reservations and budget your time accordingly, so that you can enjoy an unrushed meal.
Ambiance and décor ...
The interior decoration of this restaurant is very nice. The furnishing and fixtures are modern and elegant. There are plenty of light sources, so the restaurant is well lit. And yet, all of the earth tones make the place feel intimate.
Service ...
As I sat at the bar, I had an individual who was my primary point of contact. But frankly, the entire bar staff did check-ins to make sure my needs were met. I have no complaints about the service received.
The Food ...
I ordered: the "prime beef" 8-oz filet mignon ($91.00); sautéed wild field mushrooms, with Shishito peppers ($24.00); a Bombay Sapphire gin & tonic ($14.00); and an IPA ($12.00). With tax ($11.81), my ticket was $152.81 before any gratuity.
The filet is derived from 21-day wet aged beef. It was very tender; and it had a very good taste and texture. I am sure that the kitchen delayed serving to allow the filet to rest; but by the time it reached me, the steak was "lukewarm" (vs "warm" or "hot").
The mushrooms were prepared well but weren't standout in any way.
I have no complaints about my meal--and yet it was just a meal and not an experience.
If I simply want an 8-oz filet and sauteed mushrooms, I believe that I can find a steakhouse that can serve me a meal of equal quality for less money. But then there's a lot that goes into the calculation of posted menu prices, other than food costs. We met up with our friends for dinner here since their daughter worked here. CUT is located in the Palazzo.
When you enter you immediately are taken aback by the simple elegance of this eatery by renowned chef Wolfgang Puck. The lighting is subdued enhancing this impressive and classy interior. The design was carefully and deliberately planned and executed superbly. This is a world to which we are not accustomed but gladly welcome for the experience.
At first we were only going to order drinks but decided to eat there instead. We ordered the Australian Wagyu 8 ounce New York, American Wagyu Sliders, 2 Japanese Beef Burgers, Cavatappi Pasta "Mac & Cheese" with Hook's Cheddar, and we were sent compliments of the chef, Roasted Parsnips with Rosemary Honey & Oat Crumble. For dessert, we ordered the Pumpkin Doughnuts and Nougat Semifreddo. Wow! These all were exceptional culinary creations! Definitely refined dining. Beyond delicious, which is what you come to expect at this price point. Honestly, it exceeded expectations. It did not come cheap as the final bill came close to $400 (gulp!). Our dear friends footed the bill! We covered the tip.
The wait staff was very friendly and attended to our needs.

SSo, on the last minute I walked into the bar and was able to get a seat right away. The restaurant is beautiful inside nice and modern yet comfortable. Start off tonight with a glass of wine , a chateauneuf du pape. A wonderful expression of old world opulence, I paired it with Japanese wagyu steak tartar. Seasoned expertly, buttery and delicious!!
Was going to opt for a New York strip, but due to time constraints I went with the A-5 Wagyu burger.. Quite honestly one of the best burgers Ive eaten before. Nothing fancy a good toasted bun, top quality beef, cheese, and a thick slice of onion. I took my friends here for his bachelor party dinner and everyone loved it. Cut is now everyone's favorite steakhouse of all time. I also wanted to give a shout-out to the front desk girl (I believe her name started with an M) who presented and offered us the old-fashioned drinks. She was extremely friendly, professional and knowledgable about the products. Our server was great too.

Decided to come here for cocktails on our last night in Vegas!
Our only mistake was not staying here for dinner as nearby Bouchon was a nightmare but Cut had fabulous service, ambiance and great drinks!
I am not a big cocktail drinker but this place is home to one of my absolute favorite drinks anywhere: Pepitos Revenge and it was as fabulous as I had remembered it!
Followed this with another one that I had not tried - pins and needles which was deliciously herbaceous and a fabulous cocktails.

The bar recently underwent a renovation and expansion which is great as it was a little cramped before. We sat directly at the vet where there were both a good crowd of people and great, friendly bar staff who happily engaged in good conversation.
I am generally a beer/ wine person and though my husband went this route I knew they this was the one place to try a cocktail as Pepitos revenge is delicious and so memorable that 5 years later I had to try it again - tequila, Japanese cucumber and fresh basil all muddled together in a fresh, delicious cocktail that is hands down the best I have ever had.
Next time I will return for dinner as that too was also very memorable and delicious
